Kate Hudson doesn’t have time for a quarantine hobby. Between being a serial entrepreneur—she just launched InBloom, her first-ever line of supplements—and a mom, her days over the last few months have mostly had her trying to find a balance between making business decisions and doing laundry (stars, apparently, really are just like us). But the one thing she always manages to squeeze into her days? A healthy breakfast.
“Breakfast is my favorite meal,” says Hudson. While she practices intermittent fasting because it gives her “a lot of energy and keeps [her] metabolism on point,” she tries to have her last meal early in the day so that breakfast is a non-negotiable. And her go-to has everything she needs to start her day off on the right foot. “My favorite breakfast—even though I’m apparently not supposed to eat too many eggs—is egg whites, spinach, mushrooms, and onions with a little bit of Swiss cheese and avocado,” she says.
According to Tracy Lockwood Beckerman, RD, registered dietitian, You Versus Food host, and author of The Better Period Food Solution, this breakfast is an A++ way to kick off the day “It’s packed with an abundance of colorful antioxidants, vitamins, and minerals to get her to jump start the day,” says Beckerman. “While I would love for her to use the entire egg in her omelette for more vitamins like choline, lutein, and essential fatty acids, she gets a boost of nutrition from the avocado.” To kick this nutrient-dense meal up a notch in your own a.m. routine, the RD recommends tacking on a piece of hydrating fruit or wholesome seeded toast for added energy.
